Don Bitter's Famous Cheesecake Recipe

Don Bitter is the Director of Food Services at Summit Point. Residents at the Independent Living, Assisted Living and Memory Care community in Macedonia, Ohio are treated to Don's culinary creations on a regular basis. While Don believes in healthy eating, he also recognizes that seniors appreciate sweets and other treats. So, he decided to share his famous cheesecake recipe with the world.


Recipe makes 6 pies


Ingredients for Crust

  • ¾ pound butter, melted
  • 2 pounds graham cracker


Ingredients for Filling

  • 5 pounds cream cheese
  • 3¾ pounds sugar
  • 3 tablespoons vanilla
  • 30 eggs


Ingredients for Topping

  • 7½ pounds sour cream
  • 2 tablespoon vanilla
  • 1½ pounds sugar


Directions for Crust

  • Mix together the melted butter and graham crackers by hand.
  • Press into pie tins.


Directions for Filling

  • Mix sugar and cream cheese together.
  • Add vanilla.
  • Add eggs slowly and mix while adding.
  • Pour into pie crust gently to halfway point.


Directions for Adding Topping and Completion

  • Mix all toppings together well. Let base of cheesecake sit out for 10 minutes to settle before adding topping.
  • Spoon topping onto pie and spread evenly.
  • Bake 10-12 minutes at 350.
  • Let cool to room temperature, then refrigerate uncovered.


For flavored cheesecakes: Fold flavor into the base prior to putting in the tin. Suggestions include berries, pineapple, chocolate chips, Baileys and Frangelico.
